Stable isotope ratios 518O, S2H, , measured on the whole sample by IRMS, and the site-specific ratio determined by 2H- and 13C-NMR are the main isotopic techniques used to characterize the geographical origin of beef 72 , chicken, 73 and lamb 74 . Geographical origin can be authenticated, as can type of diet, that is, organic as against conventional farming. Extracted volatile components and fatty acid composition shared a relationship with diet, while water 18O and 2H enrichment were more closely related to geographical origin. The differentiation as a function of animal diet was performed from isotope analysis of S13C in adipose tissue from pork meat 75 . Joint analysis of S13C and 534S in liver tissue have permitted the differentiation of swine of different breeds receiving different diets 76 .
