Many vitamins and minerals are consumed in high doses for their antioxidant effects. Vitamins C and E, beta-carotene, selenium and phenolic compounds are antioxidants, which have been shown to reduce incidence of cardiovascular disease and some cancers. Antioxidants help stop the oxidation process, which is part of the aetiology of certain diseases. People therefore believe that consuming more of these antioxidants more means reducing risk of disease further. But, studies have shown that there are optimal intake levels. Consuming too high intakes of antioxidant supplements may have detrimental effects on health. antioxidants and others act as pro-oxidants, so they balance each other out. Bodybuilders should be getting plenty of antioxidants 1 to 3 grams a day of vitamin C, 400 iu of vitamin E, and up to 20,000 iu of beta carotene. The antioxidants glutathione, selenium, and N-acytl cysteine, are also helpful in fighting free radical damage. An over production of free radicals from training can damage muscle cells, hamper glucose tolerance, promote muscle inflammation, and increase Cortisol levels. Cortisol is a hormone that acts the opposite of testosterone. It can destroy muscle mass. Taking a good supplement that includes the above antioxidants can reduce the net damaging effects of radicals, and boost the immune system.

Carotenoids are orange- or red-colored substances found in many fruits and vegetables. Carotenoids are divided into two groups. Carotenes contain only carbon and hydrogen atoms. They're found in carrots, squash, and many other orange- or red-colored foods. Your body can convert alpha and beta carotene into Vitamin A the carotenes are also very powerful antioxidants. Xanthophylls contain carbon, hydrogen, and oxygen atoms. These carotenoids are found in many dark-green leafy vegetables and in egg yolks. They're also orange or yellow (xantho means yellow in Greek), but the color is covered up by the green chlorophyll in these foods. Garlic is a member of the extended onion family, but it stands out from all the others because of one phytochemical allicin. This sulfur-containing compound is what gives garlic its pungent smell and taste. In folk medicine, garlic is used for everything from athlete's foot to influenza (to say nothing of its ability to ward off vampires). There's some truth to garlic's antibiotic activity, but recent research has concentrated on garlic as an antioxidant, a way to lower cholesterol, and a way to prevent cancer. Garlic is one of the most potent antioxidant foods around it's especially good for capturing peroxyl free radicals. The antioxidant effect of garlic could be why people who eat a lot of it tend to be healthier in general.
In reality, many factors have been linked to cancer. Diet, obesity, physical activity, and heredity all seem to play a large role. Because your body will be under an enormous strain resulting from the extensive exercise and rigorous nutrition plan, I will be recommending that you beef up on your supplements, including antioxidants, minerals, amino acids, and Chinese herbs. If you have never taken any supplements, then you will need to read Chapter 8, Resources, very carefully, as I set forth the choices of supplements currently on the market and indicate some of my favorites. If you are already taking supplements, you may find it necessary to increase the amounts that you are taking.
Conjugated linoleic acid (CLA) occurs naturally in many foods, particularly in beef, turkey and some dairy products. It is a form of the essential omega-6 polyunsaturated fatty acid. It has been shown to be an anti-carcinogen, to reduce adverse catabolic effects of immune stimulation, to enhance growth, to improve blood lipid profiles (Belury & Vanden 1997) and to act as an antioxidant. It has also been indicated that CLA may enhance fat loss and increase lean body mass (Pariza, et al 1996 Chin, et al 1994). It has therefore been postulated that CLA is a growth factor in some animal species and maybe humans.
Milk thistle, or silymarin, is a herbal supplement used by steroid-taking bodybuilders as a liver detoxifier, as the use of anabolic steroids (which are metabolised in the liver) can put tremendous strain on the liver. Studies have shown much improved liver enzyme levels in athletes who use drugs in sport when using milk thistle, compared with those who do not (Neuman, et al 1991). Silymarin is also a potent antioxidant.

One important lesson learned from the Tufts study previously mentioned is that, as evaluated by the Atkins Ratio, the lumping together of fruits and vegetables as being essentially equal in benefits is not true. Relatively speaking, vegetables have considerably more antioxidant value per carbohydrate gram than fruits and thus represent a much more valuable dietary choice. Even so, after the Induction phase of Atkins, you may use some of your daily carb ration to add the more valuable fruits to your menu. Berries, including blueberries, raspberries, blackberries and strawberries, are the fruits highest in antioxidant value. Berries are also lower in carbs than other fruit and are relatively low on the glycemic index scale. Moreover, the phytonutrients in certain fruits can slow pre-cancerous growths.
