Tomato Soup

The only thing missing from the soup and sandwich combo of your youth will be the sandwich. Few things are more satisfying and comforting on a chilly Sunday afternoon than tomato soup.

1 large Vidalia onion, chopped 1 zucchini, chopped 1 teaspoon chopped fresh thyme 6 large tomatoes, skinned, seeded, and chopped

2 cups fat-free chicken broth 1 tablespoon chopped dill Garnish: 2 scallions, thinly sliced

Heat a medium-sized saucepan and spray with nonfat vegetable cooking spray. Cook onion, zucchini, and thyme over medium heat until soft and beginning to lightly brown—about 8 minutes.

Add the tomatoes and chicken broth and bring to a boil. Reduce heat and continue to simmer for about 20 minutes.

Stir in the chopped dill and continue to simmer for an additional 10 minutes.

To serve, garnish with thinly sliced scallions.

Makes 4 servings.
