Scrambled Egg Whites with Ground Turkey and Chopped Tomatoes

This hearty, "stick to your ribs" meal is one of Linda Evangelista's favorites. It will fuel your morning in a low-fat, energetic way.

2 ounces ground turkey breast V4 cup chopped fresh tomatoes

Pinch ground coriander 3 egg whites

Pinch salt and pepper 1 tablespoon water

Pinch cayenne pepper

Heat a 9-inch nonstick skillet over medium heat and coat with nonfat vegetable cooking spray.

In a small bowl, mix the ground turkey breast with the coriander and cayenne pepper. Place in skillet and brown for about 1 minute.

Add the chopped tomatoes and continue to brown, stirring frequently. Cook for about 3 minutes or until cooked through. Remove turkey and tomatoes from pan and place skillet back on the fire.

In a small bowl, whisk together egg whites and water. Season to taste with salt and pepper.

Add the egg mixture to the skillet and cook for about 1 minute or until the edges begin to set.

Place the eggs, turkey, and tomatoes on a serving platter and serve immediately.
